Abstract

Food safety is a critical aspect in the culinary industry, especially for restaurants that serve the community daily. Ampera Restaurant in Nanggalo, Padang City, faces challenges in maintaining food safety standards, including raw material management, personal hygiene, kitchen sanitation, and the implementation of balanced nutrition in the menu. This community service activity aimed to improve the knowledge, skills, and awareness of restaurant owners and staff regarding food safety practices while supporting the preparation for the Hygiene Sanitation Feasibility Certificate (SLHS). The program was carried out through socialization, development of educational modules, counseling, practical hygiene application, monitoring and evaluation, and SLHS guidance. Knowledge evaluation using pre-test and post-test showed an increase in the average score from 60 to 75. Investments provided to partners included educational modules, personal hygiene kits, and stainless-steel equipment to support safe food handling practices. Students actively participated in module preparation, counseling, monitoring, evaluation, and mentoring, providing practical field experience and enhancing the program’s effectiveness. The results indicated improved understanding and readiness of the restaurant to apply food safety and balanced nutrition standards. This initiative is expected to enhance food service quality, protect consumer health, and support the sustainability of restaurant operations in Nanggalo, Padang City.
